Preservation & Co. offers a line of jams inspired by cocktails, and also cocktail mixes and pickled products. It had been founded by Jason Poole this year, after he'd helped 17 years within the service and hospitality industry. The love for food got bigger and bigger, and that he chose to start the company like a creative outlet. His grandfather would be a farmer, so preservation of crops came like a natural interest. He decided to incorporate by using two sides of his life: your bar, and loving food.
Since then, the company has really caught on and grown. This year they won a national Bloody Mary competition, and were finalists for several Good Food awards. They began to be bought from major supermarkets, and also over 600 bars and restaurants. Wonderful that growth, Jason needed to scale up and came to PCV for support.
With PCV as a partner, Preservation & Co. is looking to create three new jobs right off the bat, and to purchase new machinery that will lead to much more job growth.
We love Jason and his team because they also have confidence in supporting the community. They've created jobs for people in underserved areas, give to numerous charities round the Sacramento area, and use the Food Literacy Center. They teach young kids the need for good food that won't have experienced real use of it before.
They're also supporting a local community garden having a product being made from produce grown there. All arises from that product goes towards operating costs of the garden.
